Q: Do they keep water cold?

These are not insulated. If the liquid in them goes in cold, it will stay cold for a bit, like in a regular cup, but will warm up over time. I made an insulated cover for my water bottle that keeps it cold or cool a bit longer. I also use the blue one of these to warm up water naturally in the sun so it will boil faster when it's time to cook dinner when camping.

Q: Can I leave this in the freezer?

Empty, sure. Full of water, uh, make sure to leave a couple of inches of empty space in the top if you have liquid in it, so the water has room to expand when it freezes and won't crack the bottle. I have never put mine in the freezer, so my answer is based on the physics of water freezing in a plastic bottle.

Q: Can ice cubes fit into the bottle (with the lid off)?

The opening for the water bottle is 1 5/16 inches.

Q: Brand new—Cap is in "lock" mode and can't seem to move it to "unlock". Any advice?

Push flip cap down near front button the dlide locking wedge right to unlock. Only other reason I can think of is there is a vacuum built up sucking cap closed. Try hot or cold. Put in freezer with slide lock open to right or maybe put in hotter water (not boiling) to break the vacuum.
